5 minute gluten free (microwave) waffles

If you’ve been following me for a while, you’ll know I’m a fan of any quick and easy gluten free conversion, and these waffles are definitely quick and easy!

To make them, we use microwave waffle makers from Aldi (special buy section), but you can get similar ones on Ebay and Amazon (and Temu, but I’m not sure what the quality would be like). Alternatively you can use a normal waffle, iron, but with limited storage space, we like these ones (and they’re dishwasher safe!)

To make them I used the Greens gluten free buttermilk pancake mix, and added a little less water than suggested, so the mix was thicker. If you find your mix is too runny, you could add a little gluten free flour to thicken it up.

I preheated the waffle maker in the microwave for a minute and a half, and then sprayed the plates with oil spray before pouring in enough mixture to cover the bottom plate.

I cooked each waffle for 5 minutes, and it cooked beautifully, brown and crunchy on the edges, softer in the middle.

The plates need to be sprayed before each new batch is cooked, otherwise the waffle will stick a little. Alternatively, you could brush the plates with butter.

We have two of these little waffle makers, so I sometimes stack them in the microwave and cook two at a time if the kids are hungry. When cooking two, I just add an extra minute to the cooking time.

These are great fresh, but are even better warmed up in the air fryer later!

And they can even be frozen and reheated – the perfect after school snack…

The kids love them with fruit in the morning, or Nutella and ice cream for dessert, they’re such a versatile little snack, and with such a quick cooking time, they really can be made on a whim.

Next time, the boys want to add maple syrup to the mix to try to make a flavoured waffle, but I think chocolate chips would be a better option…
